Valentine’s Cookies

Love is in the air… definitely in the air of my kitchen ! It’s January already and it reminds me that Valentine’s is around the corner and since my inspiration with the pink pralines is only growing bigger I decided to experiment with cookies – almond cookies!

You already know about the pink pralines tarts as well as pink pralines cake …and now the pink pralines cookies..YAY! Delicious and fast to prepare and bake, these little sweet bites are light with a bit of crunchiness to them. I have just found the perfect Valentine’s gift for my kids’ teacher.thumbnail_20170112_130334-2

With the following ingredients, you will make about 20 cookies.

Ingredients:

  • 9 Tbsp. butter at room temperature.
  • 4 Tbsp. fine baker’s sugar.
  • 2¼ oz. almond meal.
  • 3.5 oz. crushed pink pralines (if whole you will need to crush them). Plus a couple for decorating.
  • 1 cup + 1 Tbsp. all purpose flour

Instructions:

  1. Preheat your oven to 350°F.
  2. Beat the butter and sugar for a couple of minutes.
  3. Add the almond meal, the crushed pink pralines, and the flour – combine with a spatula.
  4. Form and shape small balls of dough the size of a coconut bite. Place on a cookie sheet lined with parchment.
  5. Decorate each cookie with some crushed pink pralines and cook in the oven for about 15 minutes.
  6. When done, transfer on a cooling wire rack. Let it cool before serving.
