Blueberries Dutch Pancake

I recently discovered this wonderful pancake through the YouTube series “American kids try foods around the world”. I decided to try it and it’s definitely going to be a part of my go to recipes.

Ingredients:

You will need a 12inch cast iron skillet.

  • 3 eggs
  • 3 Tbsp/45g butter
  • 1cup/125g all purpose flour
  • ½ cup/125ml whole milk
  • 2 tsp sugar
  • 1 tsp vanilla extract
  • a handful of blueberries
  • powdered sugar for dusting

Preparation:

  1. Place the skillet in the oven and preheat oven to 400°F.
  2. In a large bowl add the eggs and beat for a couple of minutes until the eggs are smooth and no longer stringy.
  3. Add the flour and sugar, and combine. When smooth, add the milk. Beat for another 2 minutes.
  4. When the skillet is hot, add in the butter and let it melt in the oven.
  5. When the butter is melted, carefully pull the pan out of the oven, and transfer half the butter to the batter. Mix quickly and transfer the batter to the skillet with the rest of the melted butter.
  6. Add the blueberries to the center of the pan.
  7. Now transfer the pan to the preheated oven and let cook for about 20 minutes until golden brown.
  8. Before serving dust some powdered sugar. Et voila !
