Fish Patties à la Provençale

Great fish patties with a flavor from the south of France! I had some fresh homemade puff pastry that I used and you will find the recipe here. But of course you can use store bought puff pastry instead!

This is winter comfort food from back home. It went down really well with a veggie soup…miam miam 🙂

With these quantities I baked 6 generous sized patties.

Ingredients:

  • 2 shallots, finely chopped
  • 10 kalamata olives, slices
  • 1cup fresh baby spinach, chopped
  • 1 medium tomato, chopped
  •  2 roasted red bell pepper, chopped
  • a handful parsley, chopped
  • 3 fish filet, haddock, catfish or tilapia, cut in small pieces.
  • ½ lemon juice and zest
  • 30g/1oz. breadcrumbs
  • 1 Tbsp. olive oil
  • salt, pepper
  • 500g/17oz. puff pastry sheet (recipe here)
  • Egg wash

Preparation:

  1. In a pan sauté the shallots in olive oil over medium heat for a few minutes.
  2. Add the spinach, parsley, roast bell pepper, olives and tomato and cook for an additional 5 minutes on higher heat.
  3. Add the fish, lemon juice and zest and cook until all water evaporates from the pan. IMG_20180108_112626718
  4. Remove from the heat. Add the breadcrumbs and with a fork, break down the fish pieces. Add salt and pepper to taste. And let the mixture cool down completely before use. IMG_20180108_113217772
  5. Dust your work station with flour. Roll out the puff pastry to obtain a sheet of about 20-inch by 13-inch.
  6. Divide the sheet into 6 equal rectangles and start stuffing and forming each patty. Brush each patty with egg wash and transfer to the fridge for 30 minutes before cooking.
  7.   Preheat the oven to 400°F. Cook the patties for about 25 minutes or until they are golden brown.
